Christmas Gingerbread Cookies
Food can transports us to moments and places we have lived. You know that feeling when you eat something and it tastes like 'Christmas'.
It's a flavor that combines cinnamon, vanilla, chocolate, nuts and ginger, maybe a warm drink. And off course Christmas wouldn't be it without cookies. There's not a house here in Colombia that doesn't buy christmas boxes full of cookies, all sizes and flavors.
Today I'll share you my cookie recipe for the traditional gingerbread cookies but with healthy and nourishing ingredients. This recipe is also vegan! I hope you enjoy it.
Ingredients: (Makes 26 medium cookies)
- 1 cup almond flour - 1 cup whole meal flour - 1/2 cup oatmeal flour
- 1/2 cup coconut sugar
- 1/2 tablespoon of ground ginger
- 1 tablespoon cinnamon
- 1/2 teaspoon ground nutmeg
- Pinch of salt
- 1 tablespoon ground chia seeds - 3 tablespoons water - 2 tablespoons maple syrup - 1 tablespoon vanilla extract Directions: - Mix the ground chia seeds with water and soak for a few minutes, this will be your egg replacer, yo can use a whole egg if not vegan. - Mix the almond, oatmeal and whole meal flour with the coconut sugar and spices (cinnamon, nutmeg, ground ginger and salt) - Add the soaked chia seeds, vanilla extract and maple syrup. - Combine he ingredients with your hands until youform a dough. If your dough is very dry you can add a tablespoon of water until it gets wet enoguh. You are looking for a soft dough that doesn't stick to your hands. - Sprinkle a little bit off wholemeal flour into a surface and spread the dough with the help of a rolling pin, about an inch thick. - Cut cookies with christmas cookie cutters (or your favorite ones!) - Place them on a baking sheet and bake at 350ºF (180ªC) - Bake them for 12 to 16 minutes or untilthey are crunchy and lightly brown.
