Banana Bread

I remember the day I received the most beautiful Christmas present I have ever received. It was my great-grandmother's recipe notebook. It was definitely a treasure in my hands! My aunt had collected every recipe she wrote.

The book had a lot of recipes handwritten by her. A lot of desserts and savory recipes that looked amazing. Many pages had stains of food, I guess from when she was making the recipes!

One of the recipes that caught my attention was the banana bread. I spent many afternoons trying to understand her handwriting and finally trying out the recipes.

I changed some ingredients of the banana bread for more healthy ones, but this bread has my great- grandmother's essence in it, so I hope you like it!

Ingredients: (For 1 bread: 10 servings)

- 2 ripe bananas (240g) (the darker the skin, the better)

- 2 eggs (or two chia eggs for vegan recipe: blend two tablespoons of chia seeds with 6 tablespoons of water)

- 1/3 cup (45g) Greek yogurt (vegans: use coconut milk or yogurt)

- 1/2 cup (65g) brown sugar

- 1 cup (225g) whole wheat flour

- 1 cup (190g) oatmeal flour

- 1 tablespoon (10g) baking powder

- 1/2 tablespoons (5g) baking soda

- 1 tablespoon (15g) cinnamon

- 1 teaspoon (5g) salt

- 1 tablespoon (15g) vanilla extract

- Chopped nuts or sunflower seeds

Process:

- In a bowl, mix the dry ingredients except sugar.

- In another bowl, add the eggs and sugar and beat with a hand mixer until they become creamy.

- Add the dry ingredients while mixing until they are incorporated.

- Puree the bananas with the help of a fork or a blender and add them to the mix. Be sure not to leave any banana chunks.

- Add the Greek yogurt while mixing.

- Pour your mixture in a greased bread pan and sprinkle some chopped nuts on top.

- Bake in a pre-heated oven at 180ºc of 350ºF for 40 to 45minutes or until you insert a wooden stick and it comes out clean.
