Matcha, Coconut and Chocolate Popsicles
A few weeks ago, my aunt gave me a chocolate agave syrup she brought from her trip to Mexico, together with other goodies: a chili, chocolate and almond Mexican mole, Magnolia hot chocolate, and this syrup.
I tried melting it and it was the best thing I could do. It's so creamy, rich, chocolate-like, and very natural. If you knew me, you' d know that I'm a dark-chocolate lover. The other day I was drinking my daily matcha tea, and I decided to try it with a drizzle of this syrup. It was so good!
These popsicles are the perfect combination. They will give you the perfect dose of energy to start the day, go to workout, or keep you going through the day if you eat them as a snack. This is another delicious way to enjoy all the benefits of matcha tea.
Ingredients: (makes 8 small popsicles):
- 1 1/2 cup (200g) coconut cream
- 2 teaspoons (5g) matcha tea
- 1 teaspoon stevia (or 2 tablespoons agave syrup)
- 1/2 cup (100g) dark chocolate
- 2 tablespoons (40g) dried coconut
How to make the popsicles:
- Beat the coconut cream with a hand whisk or in a blender for 5 minutes. Be sure to use chilled coconut cream.
- Add the matcha tea powder, stevia (or syrup) and mix until they are well combined.
- Pour the mixture in popsicle molds and freeze for 8 hours or overnight.
- Melt your dark chocolate and drizzle over your popsicles; sprinkle with some coconut.
