Oatmeal Cookies
Oatmeal, apple and cinnamon, the perfect combination to fill your kitchen and your home with that perfect scent of freshly baked cookies! My mouth becomes water every time I bake these cookies. They remind me of the ones my grandma Elisa and I used to bake together!

One of my favorite childhood snacks was cookies with milk. I loved dipping my cookies in the milk and eating them right away. I still love eating cookies with a good coffee or hot tea, specially if I have them right out of the oven.

Many brands sell oatmeal cookies, and I have to admit that I just love them. I take them everywhere I go, they are the perfect snack. But a lot of brands are selling cookies that are not as healthy as they want you to believe.

I love making my own oatmeal cookies. I pack them in tuppers or in ziplocs so I can be sure of eating healthy homemade cookies. Let's be honest: isn't the scent of these cookies the best thing about making them?

Ingredients: (For 12 medium cookies)
- 1 cup (220g) oats
- 3/4 cup (60g) of whole wheat flour
- 2 tablespoons (30g) cinnamon
- 1 1/2 (7g) tablespoons baking powder
- 1/2 teaspoon (2.5g) nutmeg
- 1 egg (For vegan recipe: blend 1 tablespoon of chia seeds with 3 tablespoons of water)
- 1/2 cup (170g) of honey
- 2 tablespoons (40g) melted coconut oil
- 1/3 cup applesauce (you can add an apple cut in small squares)
- 1 teaspoon vanilla extract
Preparation:
- Mix all the dry ingredients in a bowl.
- Add the egg (or vegan egg) and mix with the dry ingredients.
- Add the coconut oil, vanilla extract and honey and mix well.
- Add the applesauce or apple pieces and mix.
- Grease a baking pan or use parchment paper, make small balls of dough (30g each) and place them in the pan, leaving a 4 cm-space between each one of them.
- Bake at 180ºC or 350ºF for 20 minutes, or until they are crunchy.
