Chocolate Cake
Cake! A birthday one, to celebrate an important day or just because we want to eat cake. Aren't those chocolate covered with more chocolate cake delicious? Maybe it's a guilty pleassure for a lot of us.
My favorite flavor is definitely chocolate. My grandma and I used to melt lots of chocolate to pour it into these beautiful molds she had. They were so many molds we had to store them in big boxes. There was always chocolates in a box at grandmas house to eat all day long. We can enjoy chocolate in a helathy way and still remember all these memories we have around chocolate.
Ingredients: (Makes four 6cm molds)
To make the chocolate cake:
- 1 cup de almond flour
- 1 cup whole wheat flour
- 1/3 cup cacao powder
- 5 teaspoons stevia
- 3 tablespoons baking powder
- 1 egg (For vegan use: 1 tablespoon of chia seeds mixed with 3 tablespons water)
- 2 medium bananas (210g)
- 1/3 cup melted dark chocolate
- 1/3 cup greek yogurt (For vegan use coconut cream)
- 2 tablespoons peanut butter
For the chocolate frosting:
- 1 Hass avocado
- 2 tablespoons cacao powder
- 3 tablespoons honey (or agave syrup)
- 1 teaspoon lemon juice
To make the cake:
- Combine dry ingredients in a bowl (almond flour, whole wheat flour, cacao powder, stevia and baking powder)
- Add the egg and mix with a hand whisk
- Puree the bananas with a fork and add to the mixture
- Melt the dark chocolate in a water bath or microwave it for 30 seconds, mix well and microwave again until melted.
- Add the chocolate, greek yogurt and peanut butter (you can melt it too) and incorporate with the help of a spatula.
- Grease your molds and pour the mixture. I used 4 small molds 6cm each, you can use the one you want.
- Bake at 180ºC or 350ºF for 30 minutes. Cooking time depends on your mold's size, the bigger the longer it takes.
- Pinch the cake with a stick, if it comes out clean your cake is ready. Let cool before spreading the frosting on top.
To make the frosting:
- Process the avocado withlemon juice until it's creamy.
- Add the honey and cacao powder and process for a few more minutes.
- Let your frosting rest a few minutes before spreading it.
- when your cake is cooled down spread your frosting on top, you can spread it by layers or cover your cake completely.
