Vietnamese Summer Rolls

I'm a big fan of asian cuisine, I just love the combination of flavors. Choosing asian may be a healthy alternative, most of asian plates are really healthy and you have the chance to prepare them even healthier than they already are.

Vietnamese summer rolls are filled traditionally with pork, shrimp and vegetables. Off course you can make them with chicken, meat, salmon or even make them vegan or raw. It's your choice and they will always be a healthy low carb meal, with lots of nutrients. The combination of flavors is amazing since they have mint that goes amazing with sea food and veggies.

You can get really creative here. Try to use lots of veggies use each color, not only for nutritional benefits but let's be honest. They look so beautiful underneath the translucent sheet of rice paper. I love to cut zuchini stars, not only they look pretty but they can be a funny and creative way for kids to eat more veggies.

Ingredients: (Makes 5 rolls)

- 5 rice paper rolls

- Carrot

- Spinach

- Zuchini

- Avocado

* The amount of veggies is optional, you can use your favorite!

- 1/2 cup mint leaves

- 60g shrimp

- 60g pork meat

- 1 tablespoon (20g) honey

- 4 tablespoons soy sauce

To make the dipping sauce:

- 4 tablespoons (120g) soy sauce

- 1 tablespoon (20g) honey

- 2 tablespoons (80g) peanut butter

- 1 teaspoon (10g) red chilli paste

To make the rolls:

- Cook the meat in a pan with so sauce in medium heat for 5 to 10 minutes.

- Add honey and shrimp and cook for another 5 minutes or until the meat and shrimp are cooked.

- Put a sheet of rice paper in a bowl with warm water and wait 5 minutes for the sheet to soften. When it's translucent take it out and dry it with a kitchen towel. Repeat with the rest of the sheets.

- Add a small amount of each vegetable, three or four mint leaves and the meat and shrimp to the center of the rice paper sheet. Fold the sides of the sheets and roll the bottom of the sheet towrds the top. There's an image that you can use as a guide below.

- Repeat with the rest of the rolls.

To make the dipping sauce:

- Melt the peanut butter in the microwave for a few seconds.

- combine all of the ingredients with a whisk.
