Healthy Chocolate Chip Cookies
I'm that kind of girl that eats 20 cookies in a row without any problem. I love chewy, freshly baked and warm chocolate chip cookies.
Unfortunately this cookies are calorie and sugar bombs. It's okay to eat one once in a while. Okay, two or three. But, what if you could eat one everyday without any guilt? If you love chocolate chip cookies and peanut butter as I do, I'm pretty sure you'll love this recipe.
The main ingredient are chickpeas. Yes, chickpeas! They are high in protein, fiber and full of complex good carbs, and I promise that you won't taste the chickpea flavor. Peanut butter is high in healthy fats and protein too, and the combination with dark chocolate is just perfect.
I like to eat one as dessert or two as a pre-workout snack. They are great energy bites that will provide all the energy you need to workout. you can store them in an airtight container for up to 4 to 5 days.
Ingredients: Makes 12 medium cookies
- 1 1/4 cup of cooked chickpeas or rinsed canned chickpeas
- 2/4 cup of peanut butter
- 1/2 cup of dark chocolate chips
- 1 1/4 teaspoon of baking powder
- 2 teaspoons of stevia (or the sweetener you prefer)
Instructions:
- Process the chickpeas in a blender or food procesor for about 5 minutes or until you have a smooth chickpea paste.
- Add the peanut butter, stevia, baking powder and process for a few more minutes until the ingredients are incorporated.
- Pour the dough in a bowl, add the dark chocolate chips and mix with your hands until the chips are incorporated.
- Make small dough balls with your hands and smash them to make the cookie round and flat.
- Place them in a greased baking pan or a baking pan with parchment paper and bake for 15 minutes on a pre-heated oven at 180ºC or 350ºF.
- Let them cool for about half an hour at room temperature.
