Black Currant and Yogurt Popsicles
I always have ready to eat snacks in my kitchen and popsicles are a great idea because you can keep them frozen in your freezer for a long time. One of my favorite sweets is ice cream, you may have noticed that I make banana ice cream almost every day. These popsicles are as creamy as the ice cream ones but healthier and without refined added sugars and heavy cream.
Snacks with protein will keep you full for a longer time and will be more satisfying than the ones without protein. Greek yogurt is high in protein and low in fat, but I prefer to add protein powder for that extra protein and flavor, I use WHEY isolated vanilla protein perfect to eat after working out. In addition black currant is packed with antioxidants and vitamins. You can never have a healthier popsicle!
Ingredients: (For 12 small popsicles)
For the black currant sauce:
- 1 cup of black currant
- 1/2 cup of blackberries
- 1 cup of water
- 2 teaspoons of stevia (or 2 tablespoons of honey)
For the yogurt cream:
- 1 cup of unsweetened greek yogurt
- 1/3 cup of almond milk
- 1 teaspoon of vanilla ectract
- 3 tablespoons of protein powder (I use isolated Whey protein but you can use the one you prefer or not use at all)
- 1 teaspoon of stevia (or 1 tablespoon of honey)
To make the black currant sauce:
- Pour into a pot black currant, blackberries and water and let it boil in high heat.
-Add stevia or honey and cook for a few minutes in low heat until the blackberries and black currants are soft.
- Smash the blackberries and the black currants with a fork until you have a pure consistency (you can also use a hand mixer or blender if you don't want fruit chunks in your sauce)
- Cook for a few more minutes until the sauce has thickened a little bit more and cool in your fridge.
To make the yogurt cream:
- Pour the greek yogurt, almond milk and protein powder in a blender and blend until all the ingredients are combined.
- Add the vanilla extract and your sweetener of your choice (maybe you don't need to add any sweetener if your protein powder is sweet enough)
To make the popsicles:
- Pour a tablespoon of the black currant sauce in a popsicle mold and then a tablespoon of yogurt cream.
- Keep puring tablespoons by layers until you fill the entire mold.
- Insert a stick and move it around to combine the layers of yogurt cream and black currant sauce creating a marble effect.
- Put a popsicle stick in the middle and froze for 3 hours or overnight.
