Pear and Almond Pie
There's nothing more delicious than local grown fruits. The variety of fruits in Colombia is infinite and unique, since we don't have seasons here they're available all year round. My mom gave me these Colombian pears and told me she wanted a pear pie, so I decided to make a healthy version of a traditional pear pie.
It turned out so good that we ate it in one day, so that's te reason I want to share this recipe with you. This pie is perfect as dessert with greek yogurt mixed with a dash of cinnamon and coffee or hot tea, even as a gift for the ones you love, I'm sure they'll love it!
I used the remaining dough to make mini pear pies with a cupcake baking pan. They turned out to be the perfect portion size for a guilt free dessert (and you don't end up eating the whole pie, because we did.) I used oatmeal flour to substitute the powdered sugar on top, no one will believe it's not sugar!
Ingredients: For a medium tart (10 - 15 cm long)
Fot the dough:
- 4 tablespoons (80g) of almond flour
- 1/2 cup (110g) of oatmeal flour
- 1 egg
- 1 teaspoon of stevia (Or 2 tablespoons of honey)
- 1/2 teaspoon of cinnamon
- 1 pinch of salt
- 1 tablespoon of melted coconut oil
Para el Relleno:
- 3 cups of pears
- 2 taspoons stevia
- Juice of 1 lemon
- 2 tablespoons of stevia
- 1 tablespoon of oatmeal flour
- 1/3 cup of chopped almonds
Para hacer la masa:
- Mix all the dry ingredients in a bowl (Almond and oatmeal flour, stevia, salt, cinnamon)
- Add the egg and mix with your hands .
- Add the coconut oil one tablespoon at a time. If you feel that the dough is greasy don't add more coconut oil. If you feel the dough is too dry add one or two tablespoons of water.
- Roll your dough with a rolling pin in a table prinkled with a little bit of flour. Put the dough on top of your mold and cut the edges.
- Roll your remaining dough and cut figures such as hearts, starts or cut stripes to make a traditional pie crust.
- Chill in the fridge for a few minutes before baking it.
For the filling:
- Cut the pears in small squares and combine with the rest of the ingredientes.
- Leave the filling rest for 10 minutes.
To finish the Pie:
- Bake the base of your pie for 10 minutes in a pre-heated oven at 180ºC or 350ºF.
- ake out your pie base and pour the filling.
- Cover your tart with the dough figures and bake for other 10 to 15 minutes at 180ºC or 350ºF.
- Take out your pie and serve with a little bit of greek yogurt mixed with a dash os cinnamon or ice cream.
